Clay,

You do not have to "redefine" every component of the PSF environment. You only need to execute those "schmon" commands that will modify the components you want to change. I usually do this by creating a single text file with all of the schmon commands and then execute this file (from cron, if on UNIX.)

However, I typically DO redefine every component in the text file. This ensures that the entire PSF "scheme" (for lack of a better term) is consistent. Of course, either way will work.
