This would require a Complete Data backup, Reformat of all your disk arrays, sysinit, and reload of all your data.

Also you need to consider the value of the higher Data protection and performance RAID 1 gives you over Raid 5 and how that Rates in value to the amount of disk space you will get from Raid 5.
